  • oz Passata
  • 1 chopped Red Pepper
  • 1 chopped Red Chilli
  • 1 clove Garlic
  • 1 tsp Sherry vinegar
  • Juice of 1/2 Lime

Method

  1. step 1 In a blender (or with a stick blender), whizz together the passata, red pepper, chilli, garlic, sherry vinegar and lime juice until smooth.
  2. Season to taste, then serve with ice cubes

About the ingredients
Passata Solanum lycopersicum
Cooked, strained purée of tomatoes (Solanum lycopersicum, fruit). Minimally processed: tomatoes simmered, sometimes seeded/skinned, reduced. Rich in lycopene, vitamin C, potassium. Plain tomato sauce is WFPB-canonical; commercial jarred versions often add oil, sugar, and salt (separately labeled).
Red Pepper Piper nigrum
Dried unripe fruit (peppercorns) of the pepper vine, used whole or ground. A whole dried spice with nothing added or extracted. Canonical WFPB aromatic.
Red Chilli Capsicum annuum
Fruit of Capsicum plants, used fresh or dried as a pungent vegetable/spice. Contains capsaicin, vitamin C, vitamin A/carotenoids, and vitamin B6. Whole plant fruit, no isolation or additions: canonical WFPB.
Garlic Allium sativum
Garlic itself is canonical, but extract denotes a concentrated/isolated derivative outside the whole-food canon. Marketed as natural/healthy supplement, hence mistaken-as-WFPB flag.
Sherry vinegar Vitis vinifera
Vinegar made by acetic fermentation of sherry wine (from grapes), aged in the Spanish solera system. A whole-fruit-derived fermented condiment with no added oil, sugar, or animal product; alcohol is consumed in fermentation. Canonical under WFPB like other vinegars.
Lime Citrus aurantiifolia
Distinct from fresh lime juice (canonical). Concentration is an industrial vacuum-evaporation step removing fiber and concentrating sugars/acids.
