- 1 yellow onion, diced
- 2 cups TVP (textured vegetable protein)
- ¼ cup nutritional yeast
- 2 Tbsp chili powder
- 1 Tbsp smoked paprika
- 2 tsp cumin
- 1 tsp garlic powder
- 3 cups water

- ¼ cup tomato paste
Ingredient amounts above are scaled. Amounts mentioned in the method and preparation notes remain for the original recipe; adjust those to match your batch.
Method
- Heat a large nonstick skillet over medium-high heat and cook the onion for 1–2 minutes. Add 1–2 tablespoons water to prevent sticking.
- Stir in the TVP, nutritional yeast, chili powder, smoked paprika, cumin, and garlic powder. Cook for 30–45 seconds until the spices become fragrant.
- Add the water, soy sauce, and tomato paste. Stir until everything is well combined.
- Reduce heat to low, cover, and simmer for 3–5 minutes. All liquid should be absorbed and the mixture should resemble ground beef.
- Taste and season as desired or add a squeeze of lime juice.
