Homemade Hot Sauce

  1. In a saucepan, combine the chiles, onion, garlic, and 1/4 cup of water over high heat. Cook, stirring, for 2 to 3 minutes.
  2. Lower the heat to medium-high, add another 1 3/4 cups of water, and continue cooking for 15 to 20 minutes, until the chiles are very soft.
  3. Let the mixture cool to room temperature. Transfer to a food processor and process until very smooth.
  4. Add 1/2 cup of vinegar and pulse to combine. Taste and add more vinegar if needed.
  5. Transfer to a clean glass jar or bottle with an airtight lid. Keep refrigerated for up to 6 months.
